The Curb Your Snoring Recipe Of The Month – Granola Bars

These small chunks are perfect for a healthy snack as a bar or crumbled over plain yogurt or sliced fruit. They will keep at room temperature, covered, for up to a week; you can also freeze them. They are low in sugar and do not contain any dairy or wheat products which may cause inflammation in some people.

Yield: 8 Bars

Dry Ingredients:
1/4 cup almonds, toasted and chopped
1 cup rolled oats
1/3 cup wheat free flour (oat/rice/gluten-free flour, etc.)
1/4 cup unsalted sunflower seeds
1/4 cup raisins, or other dried berries
1/2 tsp. cinnamon

Wet Ingredients:
1/4 cup almond butter
1/4 cup maple or agave syrup
1 tsp. vanilla extract
1/4 cup apple juice

Instructions:

  1. Preheat the oven to 350 degrees. Oil an 8 inch baking pan.
  2. Place the dry ingredients in a medium bowl and stir to combine.
  3. Whisk the wet ingredients in another bowl and then pour it into the bowl with the dry ingredients, stirring until the batter is thoroughly moistened.
  4. Press the mixture evenly into the prepared pan and bake for 25 minutes. Remove the pan from the oven and cut into 8 chunks and spread them out on a cookie sheet.
  5. Put the cookie sheet in the oven and bake until golden brown, 10 to 12 minutes.
  6. Cool in the pan for approximately 10 minutes. Then remove the chunks with a spatula, and cool them on a rack for at least 30 minutes.
